Tomatoes for the winter: two recipes for any occasion

It is difficult to imagine a winter menu without anyconservation. Tomatoes are especially popular for the winter. At the same time, many have a prejudice against pickled tomatoes, considering them too harmful to health. In fact, in the absence of serious diseases, eating canned vegetables no more than twice a week, it is unlikely to harm your health.

  • one stalk of celery;
  • six stalks of dill with inflorescences;
  • one pod of bitter red pepper;
  • currant leaves.

Marinade:

  • 30 fragrant peppercorns;
  • eight pieces of cloves;
  • 70 g of salt;
  • liter of water.

After that, the jars are closed with lids. In a cold place, the pickle will be ready in 35-40 days, and at room temperature - after 20-23 days. For three liter cans you will need:

  • a pound of tomatoes and half a kilo of cucumbers;
  • three onions;
  • 10 cloves of garlic;
  • 90 g of vegetable oil;
  • sweet and black pepper peas.

Marinade:

  • 900 ml of water;
  • 70 g of sugar;
  • 40 g of salt;
  • one tablespoon of 70% vinegar.

Preparation

Sterilization. Everyone who at least once cooked tomatoes for the winter, understand how important this process is. It begins with a thorough washing of the cans, then let the water drain, then put the jars in the microwave for five minutes. Lids should also be boiled for about five minutes.

Preparation of vegetables. All the vegetables are diligently washed and cut slightly larger than the salad. Thus, the onion must be cut into quarters of the rings. Ingredients specified in the recipe, densely laid out on the banks. In doing so, do not forget to add to each of the cans of three peas of sweet pepper and six - black.

Marinade. We fill with enamel saucepan, immediately add salt and sugar to the liquid. As soon as the water boils, pour in the vinegar and remove the marinade from the fire. Now it can be poured into cans, adding to each a tablespoon of sunflower oil. Next, we cover each of the cans with a saucer and put it into the microwave for two minutes. Tomatoes for the winter can be pulled out from the microwave, after the water in the bank boils. At the end we roll up the cans with a machine and put the lid down, wrapping it in a warm blanket. They can be turned after cooling.
